Based in Copenhagen, Empirical Spirits is a platform to investigate flavor, traditions, technologies, and techniques from across the globe. It’s a springboard to re-examine how we build deliciousness, launch dialogues and create a whole bunch of novel libations along the way. 

As we attempt to craft unique flavor profiles, every parameter of our liquid is considered; from the local heirloom grains and bespoke yeast strains, down to our in-house koji production. By distilling under vacuum, and with ultrasonic transducers, we’re able to retain not only delicate botanical notes, but also the depth of the base fermentation resulting in a more nuanced and delicious product.
